Lyman Family Fried Chicken w/ Daddy's Special Sauce

A family favorite of ours that we tend to make over and over again is our very own homemade chicken nuggets or fried chicken, the breading works for both. Its very easy to make and can also be prepared as a last second meal as the nuggets only take 3-6 minutes to cook and the fried chicken about 15 minutes. So here is the recipe for both the chicken and my husbands special honey mustard sauce that are a must for our family.

Fried Chicken/Chicken Nuggets:

4-6 Chicken Breasts or 6-8 Drumsticks
1 C. Flour
1/2 C. Cornstarch
1 tsp. Salt
1 tsp. Season All
1/2 tsp. Cajun Seasoning
1/2 tsp. Cayenne Pepper
1 C. Cold Water
2 Eggs
4 Cups Vegetable Oil

Heat oil in a large skillet or pan over medium high heat on the stove. While oil in heating up, cut up chicken breasts into bite-sized pieces. If you are making fried chicken, thoroughly wash off drumsticks. We prefer to leave the skin on our drumsticks. Combine remaining ingredients and mix together with a whisk. Next, toss all nite-sized chicken pieces into the batter and thoroughly coat each piece. I like to stir and coat them with my own hands. Next, once again I use my hands, place each piece of chicken into the heated oil and allow to cook for 2-3 minutes then flip over and cook for 2-3 minutes on the other side. Remember to turn only once. This will help your chicken to fry evenly and also keep your chicken moist. Remove chicken and allow to rest and cool on a plate with papertowels. The fried chicken is pretty much the same, thoroughly coat drumsticks in batter and place in heated oil. Cook for 6-8 minutes on each side. Turning only once. One small tip, only use enough oil with the nuggets to cover the tops of the nuggets, you will obviously need more oil to help cover the drumsticks. Serve with the following honey mustard sauce...

Daddy's Special Honey Mustard Sauce:

3/4 C. Mayonnaise
3 Tbsp. Honey
1 Tbsp. Yellow Mustard
1 Tbsp. Dijon Mustard
1 Tbsp. Lemon Juice
2 Tbsp. Orange Juice
1/2 tsp. Lime Juice

Combine all ingredients and stir well with a whisk. Allow to set up in freezer for about 5 minutes before serving. Serve with Lyman Family Fried Chicken/Lyman Family Homemade Chicken Nuggets. Enjoy!
